Kirkbrides Favorite Quarantine Things: Quiche Recipe

We're all in this together!  We are trying to remain happy, entertained and fulfilled during quarantine and we are going to start sharing some of our favorite things our team has enjoyed during this time.  Keep checking back as our planners and coordinators all share their own take on having fun while stuck at home!



Starting off with our featured planner for Planner Week #3, Katie is our own team Martha Stewart so naturally she is sharing one of her favorite recipes!


Quiche
1 pie crust (store bought or homemade)
5 eggs
3/4 cup milk
1-2 handfuls of shredded cheese (I like to use a strong cheese for a good flavor profile)
vegetables of your choice (about 1-2 handfuls roughly chopped)
salt, pepper

Preheat oven to 350 degrees. Place pie crust in a pie plate sprayed with cooking spray.  Beat the eggs and add salt and pepper.  Add milk and cheese.  Add chopped vegetables of your choice.  I never saute the veggies before putting them in the quiche mixture, unless using onions.  They will cook in the quiche.  Pour quiche mixture in pie plate and line the edges with foil.  Bake at 350 for about an hour, removing the foil after about 30 minutes. 

My favorite combination is a smoky mushroom quiche which I make using mushrooms and a smokey cheese. Other combinations I like: sharp cheddar and spinach, jarlsberg and asparagus. 

This is a super fun and versatile dish that my mom always made when we were little.  You can get creative and adapt however you'd like! It's a good one to make for brunch when you have guests because you can prep and bake over coffee and conversation.  This recipe even translates to dinner paired with a salad or soup!  Definitely an easy recipe if you have little hands helping :)
